All-Star Cannoli

Take me out to the ball game, Take me out with the crowd;
Buy me some peanuts and Cracker Jack,
I don't care if I never get back.
Let me root, root, root for the home team,
If they don't win, it's a shame.
For it's one, two, three strikes, you're out,
At the old ball game.

We all know and love the official song of summer that’s sung by all during the 7th inning stretch at MLB games. The summer of 2012 is memorable indeed with the MLB All-Star Game in Kansas City and to celebrate, I have created a special edition "Cracker Jack Cannoli."  Delicious, crispy, savory & sweet, it's a new take on a classic Sicilian pastry.

Enjoy the game, my friends, and as the first batter comes to the base and the umpire hollers out "Play Ball!" at Kauffman Stadium, take a bite of this cannoli, savor the candy-coated popcorn and peanuts and keep your fingers crossed for a home run! I am thinking F.W. Rueckheim who created Cracker Jack in 1908 would approve!

Jasper Mirabile's MLB All-Star Game "Cracker Jack" Cannoli
Serves 8

1 lb. ricotta cheese
1 cup confectioners’ sugar (plus more for dusting)
1/2 cup or more Cracker Jack (lightly crushed)
1/4 cup chopped dark chocolate
6 – 8 cannoli shells

Place the ricotta in a large mixing bowl and fold in the confectioners’ sugar.
Add the Cracker Jack and mix gently to combine. Fold in chocolate.
Refrigerate for 2 to 3 hours before serving.
To serve, fill the shells with the cheese mixture, sprinkle with Cracker Jack and dust with confectioners’ sugar.
